Ingredients
1.5 pounds ground beef (90/10 lean)
1.5 cups long-grain white rice
1 (15 oz) can black beans, drained and rinsed
2 cups milk or vegetable broth
1.5 cups cheddar cheese, shredded
2 tablespoons taco seasoning (no pork)
1 medium onion, diced
Instructions
Heat oil in a 12-inch skillet over medium-high heat
Cook beef and onion with taco seasoning until browned
Add rice, black beans, and liquid; stir to combine
Bring to simmer, cover, and cook 18-20 minutes
Uncover, top with shredded cheese, and cook 2-3 minutes until melted
Notes
Use halal-certified ground beef if dietary requirements apply
A 12-inch cast iron or stainless steel pan works best
Optional: Add diced bell peppers or corn for extra flavor
Store leftovers in an airtight container for 3-4 days
