Ingredients
1.5 cups graham crumbs
5 tablespoons unsalted butter, melted
16 ounces full-fat cream cheese, softened
1.5 cups heavy whipping cream, chilled
1 cup powdered sugar, sifted
1 teaspoon pure vanilla extract
2 cups fresh strawberries, diced
1 teaspoon lemon juice
Instructions
Combine graham crumbs and melted butter in a bowl until mixture resembles wet sand.
Chill in refrigerator until firm (10-15 minutes).
Beat cream cheese, powdered sugar, and vanilla in a bowl until smooth.
In a separate bowl, whip heavy cream until stiff peaks form.
Gently fold whipped cream into the cream cheese mixture.
Layer chilled crust, then cheesecake filling, and top with strawberries in small jars or cups.
Chill for at least 1 hour before serving.
