Description

A tropical-inspired meal of tender chicken and sweet pineapple glazed in a savory sauce, served over fluffy rice. Perfect for a quick, restaurant-style summer dinner at home.


Ingredients

1.5 lbs chicken breast or thighs, cut into 1-inch cubes
2 cups fresh pineapple, diced into chunks
3 cups cooked fluffy rice (Jasmine or Basmati)
1/3 cup soy sauce (low sodium preferred)
3 tbsp honey or brown sugar
1 tbsp rice wine vinegar
1 tsp ground ginger
1/2 tsp garlic powder
Toasted sesame seeds (for garnish)
2 tbsp vegetable oil


Instructions

Heat a heavy-bottomed skillet over medium-high heat and add vegetable oil
Add chicken cubes and sauté until lightly browned (about 5 minutes)
Add soy sauce, honey or brown sugar, rice wine vinegar, ginger, and garlic powder. Stir well to coat
Add pineapple chunks and stir to combine; let simmer for 10-12 minutes until the sauce thickens and glazes the chicken
Serve chicken and pineapple over fluffy rice and sprinkle with toasted sesame seeds

Notes

Use a heavy skillet to achieve a restaurant-quality sear.
Rice should be prepared in advance to avoid sogginess.
For extra flavor, marinate chicken in soy sauce and ginger for 10 minutes before cooking.
