Description
A fast and nutritious chicken stir-fry made with tender chicken and crisp vegetables in a savory sauce. Ready in 30 minutes, this Asian-inspired dish is perfect for busy weeknights and delivers restaurant-quality flavor.
Ingredients
1.5 lbs (680g) chicken breast, cut into bite-sized pieces
2 medium bell peppers (mixed colors), diced
2 cups broccoli florets
1.5 cups snap peas
1 medium carrot, julienned or thinly sliced
diagonally
4 cloves garlic, minced
1 tablespoon fresh ginger, minced
3 tablespoons low-sodium soy sauce
1 tablespoon rice vinegar
1 teaspoon sesame oil
Instructions
Heat a large wok or skillet over high heat until smoking. Add half of the soy sauce and swirl to coat.
Add the chicken and cook for 5-6 minutes or until golden on all sides and cooked through. Remove and set aside.
In the same pan, add the garlic and ginger and stir-fry for 1 minute to release fragrance.
Add bell peppers, broccoli, peas, and carrots. Stir-fry for 4-5 minutes until vegetables are vibrant and slightly tender.
Return the chicken to the pan. Add the remaining soy sauce, rice vinegar, and stir well to coat. Cook for an additional 2 minutes to finish the dish.
Remove from heat, drizzle with sesame oil, and mix gently.
Serve immediately over steamed rice or noodles.
Notes
Adjust the amount of soy sauce to taste. Fresh ingredients are key to vibrant flavor.
Use thighs instead of breasts for added flavor.
Add spinach or kale for more leafy greens. Store leftovers in an airtight container in the refrigerator for up to 2 days.
