Ingredients
1.5 lbs chicken breast pieces, cut into 1-inch cubes
1.5 cups long-grain white rice, rinsed
5 cloves garlic, minced
3 cups low-sodium chicken broth

2 cups fresh baby spinach
1/2 cup grated parmesan cheese
2 tbsp fresh parsley, finely chopped
Black pepper, to taste

Instructions
