Ingredients
Boneless, skinless chicken breasts (1.5 pounds)
Fresh mango (2 ripe, diced)
Long-grain white rice (2 cups)
Lime juice (3 tablespoons, freshly squeezed)
Raw honey (2 tablespoons)
Fresh cilantro (1/2 cup, chopped)
Garlic cloves (3 medium, minced)
Ground cumin (1 teaspoon)
Cooking oil (2 tablespoons for sautéing)
Instructions
Cut chicken into 1-inch cubes. Whisk lime juice, honey, 1 tablespoon oil, garlic, and cumin for marinade.
Marinate chicken for 10 minutes while rice starts steaming.
Heat remaining 1 tablespoon oil in skillet, add chicken. Cook 3-4 minutes until browned.
Assemble bowls with warm rice, mango, cilantro, and chicken. Drizzle with excess marinade
