Ingredients
1.5 lbs chicken breast (boneless, skinless, cut into 1-inch cubes)
2 large sweet potatoes (peeled and diced)
1/3 cup honey (raw or wildflower)
4 cloves garlic (minced fresh)
1/4 cup soy sauce (use tamari for gluten-free)
2 tbsp olive oil (extra virgin)
2 tbsp fresh parsley (finely chopped)
1 tsp sesame seeds (toasted)
Instructions
Preheat oven to 400°F (200°C)
Heat 1 tbsp olive oil in a large cast-iron skillet over medium-high heat
Sear chicken cubes until golden brown (4-5 minutes), transfer to bowl
Toss sweet potatoes with 1 tbsp olive oil, add to skillet to sear (3 minutes)
Combine honey, soy sauce, and garlic in a bowl
Pour glaze over chicken and sweet potatoes, stir to coat
Roast 20 minutes, flipping halfway
Sprinkle parsley and sesame seeds before serving
