Ingredients
1.5 lbs Chicken Breasts, cut into 1-inch pieces
1 lb Yukon Gold Potatoes, sliced into small wedges
1/3 cup Olive Oil, extra virgin preferred
4 cloves Garlic, minced finely
3/4 cup Parmesan Cheese, freshly grated
2 tbsp Fresh Parsley, finely chopped, for garnish
1 tsp Dried Oregano
Salt and Pepper to taste, preferably sea salt
Instructions
Preheat the oven to 400°F (200°C) and lightly grease a large rimmed baking sheet with non-stick spray.
Whisk the olive oil, minced garlic, dried oregano, salt, and pepper in a large mixing bowl.
Toss the chicken pieces with half of the oil and seasoning until well coated.
Arrange the chicken in a single layer on the prepared baking sheet.
Toss the potato wedges with the remaining oil and seasoning, then arrange around the chicken.
Sprinkle the freshly grated parmesan cheese evenly over the chicken, pressing gently to form a crust.
Roast in the preheated oven for 35 minutes, or until the chicken is fully cooked and the potatoes are golden and crispy.
Remove from oven, garnish with chopped parsley, and serve immediately.

For extra crispiness, you can flip the potatoes halfway through cooking.
