Description

A one-pan meal combining shrimp, pre-cooked rice, zucchini, and cherry tomatoes in a garlic butter sauce for a high-protein, flavorful dinner.


Ingredients

1 lb (450g) shrimp, large, peeled, and deveined
3 cups pre-cooked long-grain or Jasmine rice
4 tbsp unsalted butter
4 cloves garlic, minced
1 cup cherry tomatoes, halved
1 medium zucchini, sliced into quarter-moons
1/4 cup flat-leaf parsley, finely chopped
1 small lemon, quartered for serving
1/2 tsp freshly cracked black pepper


Instructions

Pat the shrimp dry with paper towels
Heat skillet over medium-high heat, add butter and sauté garlic until fragrant
Sear shrimp in the garlic butter for 2-3 minutes per side until cooked through
Push shrimp to the skillet edges; add zucchini slices to the center
Sauté zucchini until tender, then add halved cherry tomatoes
Cook tomatoes until they burst, stirring occasionally
Stir in rice, parsley, and black pepper
Heat everything together for 2-3 minutes
Serve with lemon wedges
