Ingredients
1 lb large shrimp, peeled and deveined
1 1/2 cups uncooked white rice
2 sticks (8 tbsp) unsalted butter
1/4 cup finely minced garlic (~4 cloves)
1/4 tsp salt (adjust to taste)
Freshly ground black pepper to taste
2 tbsp minced fresh parsley
1 tbsp olive oil
Instructions
Preheat skillet over medium heat for 1 minute
Add olive oil and butter, melt until golden
Whisk in garlic and cook 1-2 minutes until fragrant
Stir in rice to toast 1 minute
Add shrimp, season with salt and pepper
Cook 2-3 minutes per side until pink and curled
Top with parsley, fluff and serve immediately
Notes
Use quick-cook rice for fastest results
Reduce water quantity if using day-old rice
For a veggie twist, add sautéed spinach or peas in step 2
