Ingredients
1.5 lbs boneless, skinless chicken breast
1.5 cups long grain white rice
4 tablespoons unsalted butter
6 cloves garlic
2.5 cups low sodium chicken broth
1/4 cup fresh parsley
1 tablespoon olive oil (high smoke point)
Instructions
Heat skillet over medium-high heat, add olive oil and 2 tablespoons butter
Sear garlic with chicken until golden (3-4 minutes)
Pour in broth, spread rice over chicken, sprinkle remaining butter
Cover and simmer 12-15 minutes until rice absorbs liquid
Stir, add chopped parsley, taste and adjust seasonings
Notes
For best results, rinse rice thoroughly until water runs clear
