Description
Indulge in the perfect hybrid of a fudgy brownie and a chewy chocolate cookie. This rich, decadent dessert features a deep chocolate flavor and gooey center, baked to ideal perfection for a one-bite satisfaction.
Ingredients
3/4 cup all-purpose flour
1 cup unsalted butter, half melted and browned, half chilled and cut into pea-sized chunks
3/4 cup semi-sweet chocolate, chopped
3/4 cup white sugar
1/4 cup brown sugar
1/4 cup cocoa powder, unsweetened and high quality
1 teaspoon vanilla extract
Instructions
Melt and brown 1/2 cup of butter for extra depth of flavor
Grind the remaining 1/2 cup butter into pea-sized chunks for texture contrast
Sift flour and cocoa powder into a large bowl
In a separate bowl, whisk together melted butter, sugars, and vanilla extract for 3 minutes
Gradually mix dry ingredients into wet ingredients until no lumps remain
Stir in chopped chocolate using a spatula, being careful not to over-process
Chill dough for 15 minutes if preparing multiple batches
Preheat oven to 350°F (convection if available)
Portion 2-3 tbsp of dough per cookie for fudgy centers
Place dough on a greased baking sheet, spacing 2 inches apart
Bake cookies for 10-12 minutes or until edges are golden but centers remain soft
Notes
Avoid over-baking to preserve the fudgy center
Use a silicone baking mat or parchment paper instead of greasing for even results
Replace white sugar with coconut sugar for a different depth of flavor
