A comforting and balanced meal with tender chicken cubes and fluffy rice coated in a rich, garlic-infused creamy sauce. Perfect for busy weeknights, it combines heartiness and flavor for the whole family.
Ingredients
1.5 lbs chicken breast, cubed into 1-inch bite-sized pieces
2 cups white rice, long-grain or Basmati preferred
1 cup heavy cream
4 cloves fresh garlic, minced finely
1/2 cup chicken broth, low sodium recommended
2 Tbsp olive oil, for searing
1/4 cup fresh parsley, chopped for garnish
1 tsp black pepper, freshly cracked
Salt, to taste
Instructions
Rinse the white rice under cold running water until the liquid runs clear to remove excess surface starch.
In a large saucepan, cook the rice with a 2:1 water-to-rice ratio on medium heat until tender and well cooked.
Heat 2 Tbsp olive oil in a large skillet over medium-high heat. Add the cubed chicken and sear for 2-3 minutes per side until golden brown.
Add minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
Pour in the chicken broth and stir to deglaze the pan and scrape up any browned bits.
Add the heavy cream to the skillet and stir well. Season with freshly cracked black pepper and salt to taste.
Reduce the heat to medium-low and let the sauce simmer gently for 10 minutes, allowing the flavors to meld and the chicken to cook through.
Stir in the cooked rice gently, ensuring it is evenly coated with the creamy garlic sauce.
Garnish with chopped fresh parsley and serve immediately.
Notes
Ensure the chicken is fully cooked by checking the internal temperature reaches 165°F (75°C).
For a lighter version, you can substitute the heavy cream with a non-dairy alternative such as coconut milk or a mixture of milk and a little butter.
The rice can be prepared ahead of time and stored in the refrigerator for up to three days.
