Ingredients
1.5 lbs (4) boneless, skinless chicken breasts
1/2 cup Greek yogurt
2 medium lemons, 1 juiced, 1 for garnish
3 tbsp extra virgin olive oil
3 cloves minced garlic
1 tsp dried oregano
1 tbsp honey
Salt and pepper to taste
Instructions
Preheat oven to 400°F (200°C) and position oven rack to a high level.
Pat chicken dry with paper towels.
In a bowl, mix Greek yogurt, 2 tbsp olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
Coat chicken with the marinade, cover, and refrigerate 15-20 minutes.
In a small bowl, whisk remaining 1 tbsp olive oil with honey.
Place chicken on a rimmed baking sheet, spacing 2 inches apart.
Bake 15 minutes, then baste with honey-oil mixture.
Rotate pan and bake 5-7 minutes for caramelized skin.
Pour pan juices into a saucepan, reduce by half to make a glaze.
Brush glaze over chicken 1-2 minutes before oven removal.
Notes
For juicier chicken, brine in salted water for 30 minutes before cooking.
Replace Greek yogurt with buttermilk for a more tender texture.
Serve with lemon slices and fresh herbs like parsley or dill.
Add oven-roasted vegetables (e.g., asparagus, bell peppers) for a complete meal.
