Ingredients
Ground beef (80/20 blend) 1.5 lbs
Onion, diced 1 medium
Garlic, minced 3 cloves
Bell pepper, diced 1 large (any color)
Diced tomatoes, canned 1 can (14.5 oz)
Rice, uncooked 1 cup
Salt and pepper to taste
Italian seasoning, optional
Olive oil, for cooking
Instructions
Heat olive oil in a large skillet over medium heat.
Add ground beef and cook until browned, breaking up clumps.
Add diced onion and garlic; cook until softened.
Stir in bell pepper and diced tomatoes (with juice);
Mix in uncooked rice, salt, pepper, and Italian seasoning if using.
Add 1.5 cups water; bring to a boil, then reduce heat to low.
Cover and simmer for 18-20 minutes or until rice is tender and liquid is absorbed.
Let stand 5 minutes before fluffing with a fork.

Any color bell pepper works—red adds sweetness, green offers tanginess.
