Ingredients
Shrimp, peeled and deveined (1 pound, 16-20 count)
Orzo pasta (1.5 cups dry)
Garlic cloves, minced (5-6 cloves)
Chicken or vegetable broth (3.5 cups, low-sodium)
Heavy cream (1 cup)
Fresh spinach (3 cups loosely packed)
Parmesan cheese, grated fresh (1 cup)
Olive oil, extra virgin (3 tablespoons)
Sea salt (1 teaspoon)
Instructions
Heat olive oil in a large skillet over medium heat.
Add garlic and sauté until fragrant (1 minute).
Add shrimp, season with salt, and cook until opaque (3-4 minutes). Push shrimp to the side.
Add orzo to the skillet and toast for 2 minutes.
Pour in broth, bring to a boil, then reduce heat to low. Simmer until orzo is tender (10-12 minutes).
Stir in heavy cream and cook gently until warmed through.
Toss in spinach and fresh Parmesan until wilted and incorporated.
Adjust seasoning and serve immediately.
