Ingredients
12 oz (340g) pre-cooked chicken gnocchi
2 boneless skinless chicken breasts (6 oz each)
4 garlic cloves, minced
1 tbsp olive oil (sauté garlic)
1 tsp olive oil (chicken toss)
1 cup (240ml) chicken broth
1 cup (240ml) heavy whipping cream
1/2 cup sun-dried tomatoes (rehydrated if desired)
1 cup sliced mushrooms
5 oz (140g) fresh spinach
1/2 cup grated Parmesan cheese
1 large egg
1 tbsp fresh thyme or 1 tsp dried thyme
Instructions
Preheat oven to 375°F (190°C). Grease a 10-inch oven-safe skillet.
Dice chicken into 1-inch cubes. Toss with 1 tsp olive oil to coat.
In separate pan, sauté garlic in 1 tbsp olive oil until golden. Set aside.
Sear chicken cubes in skillet 3-4 minutes total until golden browned.
Add sun-dried tomatoes, mushrooms, and sautéed garlic. Cook 2 minutes to blend flavors.
Pour in chicken broth and simmer 5 minutes to deglaze the pan.
Add gnocchi, spinach, and cream. Cover and braise in preheated oven 15 minutes.
Carefully crack egg on top. Cover skillet and cook 2 additional minutes until egg is softly set.
Sprinkle Parmesan and thyme. Let rest 5 minutes before serving.
Notes
Use a digital timer to prevent overcooking the egg and maintaining gnocchi texture
Chiffonade basil and submerge in ice water for vibrant color garnish (optional upgrade)
Crush 1/3 of the gnocchi gently for better sauce absorption
