Ingredients
Chicken Breasts (1.5 lbs, pounded to even thickness)
Long Grain White Rice (2 cups, rinsed until water runs clear)
Heavy Cream (1 cup, room temperature)
Parmesan Cheese (1/2 cup, freshly grated)
Chicken Broth (1.5 cups, low sodium)
Garlic (3 cloves, minced)
Fresh Parsley (2 tbsp, chopped for garnish)
Olive Oil (2 tbsp, high smoke point)
Instructions
Season chicken breasts thoroughly with salt and black pepper on both sides
Heat the olive oil in a large heavy-bottomed skillet over medium-high heat
Place the chicken in the hot pan and sear for 5 minutes per side
Deglaze the pan with 1/2 cup chicken broth, scraping up fond
Add garlic and remaining broth, stir in rice. Bring to a boil, then reduce heat
Pour in heavy cream and parmesan cheese, simmer until sauce thickens (5-7 minutes)
Increase heat slightly to maintain gentle boil for 15-18 minutes, until rice is tender and sauce has emulsified
Remove chicken, slice if desired, and serve over rice with sauce
Notes
Pounding chicken ensures even cooking
Use a non-reactive pan for optimal parmesan melting
Add a splash of lemon juice before serving for brightness
Substitute vegetable broth and vegan parmesan for dietary restrictions
