Description
This quick Asian fusion recipe features poached chicken in a rich garlic cream sauce with ramen noodles, ready in 30 minutes. Perfect for a luxurious, no-fuss weeknight meal.
Ingredients
1.5 lbs (680g) boneless chicken breasts, cut into bite-sized chunks
12 oz (340g) chicken ramen noodles
8–10 fresh garlic cloves, minced
1.5 cups (355ml) heavy cream
1 cup (100g) freshly grated Parmesan cheese
6 cups (1.4L) low-sodium chicken broth
3 tablespoons (45g) unsalted butter
Salt and black pepper, to taste
1/2 teaspoon red pepper flakes (optional)
Instructions
Heat chicken broth in a large pot over medium; add chicken breasts and poach until tender, 15–18 minutes.
Remove chicken, chopping into bite-sized pieces. Add butter to the pot, then sauté garlic until fragrant.
Pour in heavy cream and bring to a gentle simmer. Gradually add Parmesan cheese, stirring until sauce is smooth.
Cook ramen noodles according to package instructions, 3–4 minutes, then add to the sauce along with cooked chicken.
Season with salt, pepper, and red pepper flakes if using. Toss to combine and serve garnished with additional Parmesan.
Notes
For a vegetarian version, substitute chicken with tofu or chickpeas and use vegetable broth.
