Ingredients
4 boneless, skinless chicken breasts, cut into 1-inch cubes
16 oz (450g) cheese-filled spinach tortellini
3 tbsp olive oil
4 garlic cloves, minced
4 cups baby spinach
1 cup heavy cream
1 cup shaved fresh parmesan cheese
1 tsp salt
1/2 tsp black pepper
1/2 tsp Italian seasoning
Instructions
Heat olive oil in a large skillet over medium heat
Add chicken cubes and sauté 5-6 minutes until browned and cooked through
Add garlic and sauté 1 minute until fragrant
Stir in tortellini, cream, parmesan, salt, pepper, and Italian seasoning
Bring to simmer, then reduce heat to medium-low
Cover and cook 10 minutes until tortellini is heated through and sauce thickens
Stir in fresh spinach until wilted (1-2 minutes)
Serve immediately in warmed bowls
