A quick, one-pan Italian-American dinner combining tender chicken, pillowy potato gnocchi, and a rich garlic parmesan cream sauce with fresh spinach. Perfect for busy weeknights with minimal cleanup.
Ingredients
Boneless, skinless chicken breasts, 1.5 pounds (cut into 1-inch cubes)
Potato gnocchi, 1 pound (fresh or frozen)
Heavy cream, 1 cup (full-fat)
Garlic cloves, 4 (minced fresh)
Fresh spinach, 3 cups (packed)
Grated parmesan cheese, 1 cup
Salt and pepper, to taste
Olive oil, 2 tablespoons
Instructions
Heat olive oil in a large skillet over medium-high heat.
Sauté chicken cubes 4-5 minutes until golden and nearly cooked through.
Add garlic and cook 1 minute until fragrant.
Toss in frozen or fresh gnocchi and spinach, cooking 5-7 minutes until gnocchi is tender and spinach is wilted.
Pour in heavy cream, add grated parmesan, and bring to a gentle simmer.
Season with salt and pepper, stirring until sauce thickens slightly (5 minutes).
Serve hot, garnished with additional parmesan if desired.
Notes
Use halal-certified chicken and non-alcoholic ingredients if required
Leftovers can be refrigerated for 3-4 days
For a vegetarian version, substitute chicken with mushrooms or cauliflower
