Ingredients
Boneless, skinless chicken breasts – 1.5 lbs (cut into 1-inch cubes)
Long-grain white rice (jasmine or basmati) – 1.5 cups uncooked
Chicken broth (low-sodium) – 3 cups
Olive oil – 2 tablespoons
Onion (yellow or white), diced – 1 medium
Garlic cloves (fresh), minced – 3
Bell pepper, diced – 1 large (any color)
Salt – to taste
Black pepper – to taste
Instructions
Heat olive oil in a large pot over medium-high heat.
Sear chicken cubes 3-4 minutes per side until browned.
