Ingredients
1 lb (450g) ground beef
12 oz short pasta (shells or rotini)
2 tbsp taco seasoning
3 cups beef broth
8 oz plain tomato sauce
1/2 cup heavy cream
2 cups freshly shredded cheddar cheese
1/4 cup fresh cilantro, chopped
1/2 cup diced onions
Instructions
Heat a large skillet over medium-high heat
Add ground beef and onions, sear until browned
Stir in taco seasoning and cook for 1 minute
Pour in beef broth and bring to a simmer
Add tomato sauce and heavy cream, stir to blend
Introduce dry pasta and cook until tender
Reduce heat, stir in cheese until melted
Garnish with fresh cilantro before serving
Notes
Use sharp aged cheddar for optimal melting
Reserve 1/4 cup pasta water if needed for consistency
