Ingredients
2 cups instant white rice
1 (14-oz) rotisserie chicken, shredded
1/2 cup olive oil
1/2 cup chopped cilantro
4 tbsp lime juice
1 tbsp chili powder
1 tsp ground cumin
1 large onion, diced
2 cloves garlic, minced
1 (15-oz) can black beans, drained
1 (15-oz) can sweet corn, drained
Flexible toppings: guacamole, avocado, lettuce, tomatoes, salsa
3 cups shredded cheddar or Mexican blend cheese
Instructions
Preheat rice according to package instructions
In a large skillet, heat olive oil
Add onions and garlic, sauté for 3-4 minutes
Mix in cilantro, lime juice, chili powder, and cumin; cook 1 minute
Combine cooked rice with chicken and cheese (reserving 1 cup cheese for topping)
Layer rice, chicken, warm beans, and corn in bowls
Sprinkle remaining cheese on each serving
Top with desired veggies and guacamole
