A savory casserole that layers seasoned ground beef, melted cheddar cheese, and soft tortillas with salsa and cilantro. This family-friendly baked dish combines the flavor of a quesadilla with the convenience of a one-pan meal.
Ingredients
1.5 lbs ground beef (85/15 lean preferred)
8 large flour tortillas (burrito size)
3 cups shredded cheddar cheese (sharp or medium)
1 cup salsa (mild, medium, or chunky)
2 tbsp taco seasoning (low sodium)
1/4 cup fresh cilantro, finely chopped
1 tbsp cooking oil (for greasing the dish)
Instructions
Preheat oven to 375°F (190°C)
Heat a skillet over medium heat and cook ground beef until browned; drain excess fat
Add taco seasoning and stir until fully incorporated; set aside
In a 9×13-inch baking dish, brush bottom with cooking oil
Layer 4 tortillas as the base, overlapping slightly to cover the dish
Spread half the cooked beef mixture evenly over the tortillas
Sprinkle 1.5 cups of cheese over the beef
Add 1/2 cup salsa and another 1.5 cups cheese
Layer remaining 4 tortillas over the top
Top with remaining salsa, cilantro, and a final sprinkle of cheese
Bake for 20 minutes until golden and bubbling
Let cool slightly before slicing into 6 portions

For a dairy-free version, substitute plant-based cheese
Use cooked turkey or plant-based crumbles for a heartier alternative
