Description
A hearty one-pan Tex-Mex dish combining seasoned beef, creamy rice, and melted cheddar for a high-protein, family-friendly meal. Revel in bold flavors without the cleanup of multiple pots.
Ingredients
Ground Beef (1 lb)
Long Grain White Rice (1.5 cups)
Beef Broth (2.5 cups)
Melted Cheddar (2 cups)
Tortilla Chips (2 cups)
Salsa (1 cup)
Sour Cream (1/2 cup)
Green Onions (1/4 cup)
Taco Seasoning (2 tbsp)
Instructions
Brown ground beef in an oven-safe skillet over medium-high heat until no pink remains.
Drain excess fat from the skillet.
Add taco seasoning, minced garlic, diced onion, and salsa, sauté for 2-3 minutes.
Incorporate rinsed rice and beef broth.
Bring to a boil, then simmer uncovered for 10 minutes to release moisture from rice.
Remove from heat, cover with a lid or foil, and transfer to a preheated 375°F (190°C) oven.
Bake for 25-30 minutes until rice is tender and cheese is melted.
Layer crushed tortilla chips and shredded cheddar on top, then return to oven for 5-7 minutes to melt cheese.
Top with salsa, sour cream, and green onions before serving.
Notes
Use lean 90/10 ground beef to reduce greasiness.
Opt for low-sodium broth for better seasoning control.
Freshly shredded cheddar melts more evenly than pre-shredded.
Ensure rice is rinsed to avoid mushy texture.
