1.5 cups long-grain white rice, rinsed
1 can (15 oz) black beans or pinto beans, drained and rinsed
2 cups chunky salsa (mild, medium, or hot)
2 cups beef broth (low sodium)
2 cups shredded cheddar cheese (sharp)
2 Tbsp taco seasoning (chili powder, cumin, garlic, onion powder)
1/2 cup green onions, sliced (for garnish)
1 Tbsp vegetable oil (for searing)
Instructions
Preheat oven to 375°F (190°C)
Heat 1 Tbsp vegetable oil in a large oven-safe skillet or pan over medium-high heat
Brown 1 lb ground beef, breaking it into small pieces
