Description
A one-pan Tex-Mex meal with tender seasoned beef, fragrant rice, and cheesy beans. Perfect for quick weeknight dinners with bold flavors and minimal cleanup.
Ingredients
Lean Ground Beef – 1 lb
Long Grain White Rice – 1 cup (rinsed)
Black Beans or Pinto Beans – 15 oz (rinsed and drained)
Mild or Medium Salsa – 1.5 cups
Beef Broth – 1.5 cups
Shredded Cheddar Cheese – 2 cups
Taco Seasoning – 2 tbsp
Sour Cream – 1/2 cup
Instructions
Heat skillet over medium-high heat, add beef, and brown 5-7 minutes.
Add taco seasoning and cook 1 minute.
Add rice, beans, salsa, and broth; stir to combine.
Bring to boil, reduce heat, cover, and simmer 20 minutes until rice is tender.
Stir in sour cream and cover to warm.
Sprinkle with cheese and let stand until melted, 2-3 minutes.
Notes
Use 90% lean beef for less grease
Rice can be swapped for quinoa or cauliflower rice
Freezes well in airtight containers up to 3 months
Top with avocado or cilantro before serving
