Description
A comforting Mexican-American casserole with seasoned ground beef, fluffy rice, tangy enchilada sauce, and melted cheddar cheese, baked to perfection in one pan for a hassle-free meal.
Ingredients
2 lbs ground beef
3 cups cooked rice
2 cups shredded cheddar cheese
2 cans (10 oz each) enchilada sauce
8–10 flour tortillas
1 medium yellow onion, diced
3 garlic cloves, minced
1 tsp ground cumin
1 tsp salt
1 tsp chili powder
Optional: 1 jalapeño, sliced (for heat)
Optional: fresh cilantro or avocado for garnish
Instructions
Preheat oven to 375°F (190°C)
Brown ground beef in a skillet until cooked through; drain excess fat
Add diced onion, garlic, cumin, salt, chili powder, and optional jalapeño; sauté until onion is soft
Mix cooked beef mixture with cooked rice in a bowl
In a 9×13-inch baking dish, layer 4 tortillas slightly overlapping to cover the bottom
Spread 1/3 of the beef-rice mixture evenly over tortillas
Pour 1/2 of the enchilada sauce over rice
Repeat layers: tortillas, remaining beef-rice, remaining enchilada sauce
Cover with remaining tortillas and top with shredded cheddar cheese
Bake 25-30 minutes until bubbly and golden, then broil 2-3 minutes for a golden top
Let rest 10 minutes before slicing into serving portions
Notes
Use fresh block cheddar for better melting
Corn tortillas work but may absorb more sauce
Instant rice or leftover rice works well here
Top with cilantro or avocado before serving
Leftovers reheat well in oven or microwave
