Ingredients
1.5 lbs chicken breast or thighs, bite-sized
3 cups cooked Jasmine or Basmati rice
1/2 cup honey garlic sauce (honey, soy sauce, minced garlic, ginger)
2 cups steamed broccoli, small florets
1/2 cup shredded carrots (raw or lightly sautéed)
1 Tbsp sesame seeds, toasted
3 stalks green onions, thinly sliced
Instructions
Whisk together honey, soy sauce, garlic, and ginger to form a glaze.
Pat chicken dry and coat with glaze.
Heat oil in a pan over medium-high heat and sear chicken 3-4 minutes per side.
Add 1/4 cup water to the pan and simmer 5 minutes until sauce thickens and coats the chicken.
Steam broccoli until tender-crisp (7-10 minutes).
Layer rice in bowls, top with chicken, broccoli, carrots, a spoonful of sauce, and garnish with sesame seeds and green onions.
Notes
For juicier chicken, use thighs instead of breasts.
Rice can be pre-cooked; reheat before serving.
