Ingredients
4 boneless chicken breasts
1 lb dried fettuccine pasta
3 tbsp olive oil
4 garlic cloves, minced
1 cup chicken broth
1 cup heavy cream
1 tsp salt
1/2 tsp black pepper
1/4 cup grated Parmesan cheese (optional)
Fresh parsley, chopped
Instructions
Preheat skillet over high heat with 1 tbsp olive oil
Slice chicken breasts diagonally into 1/8-inch strips
Season with 1/2 tsp salt and cook 3-4 minutes per side until golden
Meanwhile, bring 4 quarts salted water to boil for pasta
Cook pasta according to package instructions
Return cooked chicken to skillet, add garlic, chicken broth, cream, salt, and pepper
Simmer sauce on medium-high 2-3 minutes while pasta finishes cooking
Reserve 1/2 cup pasta water
Add pasta to skillet with sauce, toss to coat
Finish with Parmesan and parsley
